INGREDIENTS
2 cups samp & bean mix, washed and soaked overnight
8 cups water
1 Tbsp oil
1 onion, chopped
1 green pepper, chopped
1 bunch spinach, chopped
1 Tbsp TOP CLASS Mild & Spicy Flavoured Curry Powder
2 chilli beef flavoured stock cubes
1 cup water
4 Tbsp TOP CLASS Mutton Flavoured Soya Mince
METHOD
Drain the samp and bean mix, place into a large pot with the water and simmer on low until nearly soft. Check every 5 minutes, adding more water if necessary and stirring frequently.
Drain and set aside.
Heat the oil in a large pot, then fry the onion and green pepper until soft.
Add the TOP CLASS Mild & Spicy Flavoured Curry Powder and fry for a further minute.
Add the cooked samp and beans, chilli beef stock cubes, water and TOP CLASS Mutton Flavoured Soya Mince and stir well.
Simmer and stir occasionally, until the samp has a soft, creamy texture. Top with chopped spinach when serving the dish.
Add chopped and cooked butternut cubes to your dish if you want it to go a little further.
