INGREDIENTS
1kg stewing lamb
4 potatoes, peeled & cubed
3 carrots, chopped
1 onion, chopped
½ red pepper, chopped
½ green pepper, chopped
3 Tbsp oil
2 Tbsp TOP CLASS Hot Flavoured Curry Powder
½ cup of water
2 Tbsp of TOP CLASS Rich Beef Flavoured Soup
1 tsp garlic, crushed
2 cups flour
4 tsp baking powder
1 tsp salt
1 cup milk
METHOD
Stew:
Brown the stewing lamb and set aside.
Using the same pot, fry the onions until glossy and then add TOP CLASS Hot Flavoured Curry Powder.
Add in the chopped red and green peppers, crushed garlic and ginger and fry for 5 minutes.
Add the lamb and cover with the lid and cook on low heat for 15 minutes.
Stir and increase heat to medium and add in the ½ cup of water.
Add TOP CLASS Rich Beef Flavoured Soup powder to the pot and stir.
Add in the potatoes and carrots and cook until tender, whilst stirring in between.
Dumplings:
Sift the flour, baking powder and salt together in a large bowl.
Add the cup of milk and mix into a batter and set aside for 10 minutes.
Once the stew is nearly done cooking, drop spoonfuls of the batter on top of the stew mix.
Cover and cook for a further 15 minutes.
To ensure the dumplings are cooked, insert a toothpick into the center of a dumpling and it should come out clean if cooked.
