INGREDIENTS
2 Tbsp oil
1 onion, chopped
1kg minced beef
2 tsp curry powder
1 TOP CLASS Brown Onion Flavoured Soup
2 cups water
50g tomato paste
2 cups frozen mixed vegetables
4 large potatoes, peeled & chopped
500g butternut, peeled & chopped
3 Tbsp milk
METHOD
Preheat the oven to 180°C.
In a pan, fry the onions until soft.
Add the beef mince and curry powder in the pan and fry for 10 minutes.
Add in the TOP CLASS Brown Onion Flavoured Soup powder, 500ml water and tomato paste and simmer for 5 minutes.
Add the mixed vegetables into the pan and stir.
Pour the mixture into an ovenproof dish and set aside.
Boil the potatoes and butternut together until soft. Drain and mash, adding milk until light and fluffy. Spread the mash over the mince. Bake for 20 minutes, or until golden brown.
Top with grated cheese and grill.
