INGREDIENTS
500g butternut cut into large cubes
1 onion, chopped
4 Tbsp oil
1 red pepper, chopped
1 green pepper, chopped
1 Tbsp ginger and garlic paste
3 tsp Chicken Noodle packet soup (made into a paste)
250ml fresh cream
Fresh coriander to garnish
2 Tbsp TOP CLASS Medium Flavoured Curry PowderÂ
TOP CLASS Original Flavoured Spice Mix, to season
METHOD
Boil the butternut, drain and set aside.
Fry onions in oil until glossy and then add the TOP CLASS Medium Flavoured Curry Powder.
Add the peppers, ginger and garlic paste and fry.
Add in the contents of the Chicken Noodle packet soup and stir.
Reduce the heat and add in the butternut.
Once combined, mix in the cream and a dash of TOP CLASS Original Flavoured Spice Mix and cook for a further 5 minutes.
Make your meal go further by mixing in 1 tin of drained chickpeas and serve in bowls with steamed white rice.
